La Ville végétale étudie les villes françaises depuis le XVIIe siècle sous un angle innovant qui est celui de leur nature végétale : parcs et jardins, certes, mais aussi plantes « hors-sol » qui circulent dans l’espace urbain (légumes, fleurs coupées, déchets végétaux, etc.). Il s’agit de montrer que la ville n’est pas que minérale et artificialisée et qu’au contraire le végétal en irrigue les artères, même si cette présence a fluctué au fil du temps, en quantité comme en qualité.
